Peanuts are an annual herbaceous plant, 1 to 1.6 feet tall, that must be planted every year. The yellow-orange flowers last one day and, if pollinated, grow an unusual stalk called a pedicel at the base of the ovary. This elongated “peg” burrows into the soil and grows peanut pods underground. The United States ranks fourth, producing some 2.4 million tons — 5 percent of global production. Growing demand and increasing population are drawing down global food stocks. Of 13 U.S. states with about 7,000 commercial farmers, the Southeast region — Mississippi, Alabama, Georgia and Florida — grows 72 percent of U.S. peanuts.
Before 1930, peanuts were a home garden crop. Plants, nuts and shells were used as animal feed. From the late 1800s, the Department of Agriculture (USDA) encouraged more production for human consumption. Dr. George Washington Carver (1861–1943), an American research scientist, invented 300 uses for peanut products during his lifetime. Carver developed 140 tasty recipes. Peanuts are eaten from the shell, boiled, salted, dry-roasted and ground into flour, peanut butter and cooking oil.
